Chef Bani has been working expansively with local harvests and has built this cake up with rasbhari fruit, also known as Gooseberries and aamada, literally translated to Mango Ginger because it tastes similar to a raw mango.

The berries are tangy and sharp because of their acidic and astringent flavour profile. Chef Bani has carefully constructed the entremet and balanced the sour berries with the sweetness of chocolate. 

The layers have a sponge with mango ginger and toasted cacao nibs, gooseberry jam and dark chocolate mousse and topped with fresh gooseberries.


Milk, refined sugar, eggs, gelatine, dark chocolate, whipped cream, refined wheat flour, cocoa powder, sea salt, butter, cream, cooking oil, cocoa powder, cacao, gooseberries, mango ginger, yogurt. 


Lactose, Egg, Gluten, Soy, Nuts, Chocolate.


Refrigerate upon arrival. Leave at room temperature for 2 hours before serving for it to soften.
